Low carb chocolate ganache is a delicious, keto-friendly dessert that is easy to prepare and perfect for those following a keto diet. This recipe is sugar-free, gluten-free, and dairy-free, making it suitable for a variety of dietary needs.

  1. Chop the dark chocolate into small pieces and place it in a heatproof bowl.
  2. In a saucepan, heat the coconut milk until it is hot, but not boiling.
  3. Pour the hot coconut milk over the chopped chocolate. Let it sit for a minute to allow the chocolate to melt.
  4. Add the erythritol and vanilla extract to the bowl.
  5. Stir the mixture until it is smooth and glossy. If the chocolate is not fully melted, you can place the bowl over a saucepan of simmering water (double boiler) and stir until smooth.
  6. Allow the ganache to cool at room temperature. As it cools, it will thicken and become spreadable.
  7. The ganache is now ready to be used. It can be spread on cakes, used as a filling for pastries, or eaten on its own as a decadent dessert.
