Low Carb Christmas Pate with Cranberry Pickled Red Onions[edit | edit source]

- Pate
- Cranberry Pickled Red Onions
- 2 Red Onions, thinly sliced
- 1 cup of Cranberry Juice
- 1/2 cup of Apple Cider Vinegar
- 1/2 cup of Erythritol
- 1 tsp of Salt
Instructions[edit | edit source]
- Start by preparing the pate. Melt the butter in a pan over medium heat. Add the onions and garlic and sauté until they become translucent.
- Add the chicken livers to the pan and cook until they are browned on all sides. Season with thyme, salt, and pepper.
- Transfer the mixture to a food processor and blend until smooth. Pour the pate into a dish and refrigerate for at least 2 hours.
- While the pate is chilling, prepare the cranberry pickled red onions. Combine the cranberry juice, apple cider vinegar, erythritol, and salt in a saucepan and bring to a boil.
- Add the sliced red onions to the saucepan and simmer for 10 minutes. Remove from heat and let the onions cool in the liquid.
- Once the pate is chilled and the onions are pickled, serve the pate topped with the cranberry pickled red onions.
