Low carb curry chicken

Low Carb Curry Chicken is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavors, making it a great choice for a weeknight dinner or a special occasion.
Ingredients[edit | edit source]
- 2 lbs of chicken breasts
- 2 tablespoons of coconut oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 tablespoons of curry powder
- 1 can of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions[edit | edit source]
- Cut the chicken into bite-sized pieces and season with salt and pepper.
- Heat the coconut oil in a large pan over medium heat.
- Add the onion, garlic, and ginger to the pan and sauté until the onion is translucent.
- Add the curry powder to the pan and stir to combine.
- Add the chicken to the pan and cook until it is no longer pink in the middle.
- Pour the coconut milk into the pan and stir to combine.
- Reduce the heat to low and let the curry simmer for 20 minutes.
- Garnish with fresh cilantro before serving.
