Low carb granola bars
Low Carb Granola Bars[edit | edit source]
Low carb granola bars are a delicious and healthy snack option for those following a keto diet. They are packed with fiber, protein, and healthy fats, and are free from added sugars.
Ingredients[edit | edit source]
- 2 cups of almonds
- 1 cup of pecans
- 1 cup of pumpkin seeds
- 1/2 cup of chia seeds
- 1/2 cup of flax seeds
- 1/2 cup of unsweetened shredded coconut
- 1/2 cup of sugar-free chocolate chips
- 1/2 cup of natural peanut butter
- 1/2 cup of coconut oil
- 1/4 cup of erythritol
- 1 tsp of vanilla extract
- 1/2 tsp of sea salt
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, pulse the almonds, pecans, and pumpkin seeds until they are coarsely chopped.
- Transfer the chopped nuts to a large bowl and add the chia seeds, flax seeds, shredded coconut, and chocolate chips.
- In a small saucepan, melt the peanut butter, coconut oil, erythritol, vanilla extract, and sea salt over low heat. Stir until well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is well coated.
- Spread the mixture evenly onto the prepared baking sheet and press down firmly to compact it.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the granola bars to cool completely before cutting into bars.
