Low Carb Granola Bars[edit | edit source]

Low carb granola bars are a delicious and healthy snack option for those following a keto diet. They are packed with fiber, protein, and healthy fats, and are free from added sugars.

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the almonds, pecans, and pumpkin seeds until they are coarsely chopped.
  3. Transfer the chopped nuts to a large bowl and add the chia seeds, flax seeds, shredded coconut, and chocolate chips.
  4. In a small saucepan, melt the peanut butter, coconut oil, erythritol, vanilla extract, and sea salt over low heat. Stir until well combined.
  5. Pour the wet mixture over the dry ingredients and stir until everything is well coated.
  6. Spread the mixture evenly onto the prepared baking sheet and press down firmly to compact it.
  7. Bake for 20-25 minutes, or until the edges are golden brown.
  8. Allow the granola bars to cool completely before cutting into bars.
