Low carb halloumi and spinach curry
Low Carb Halloumi and Spinach Curry[edit | edit source]
A delicious and hearty keto friendly dish, this Low Carb Halloumi and Spinach Curry is perfect for those following a low carb or keto diet.
Ingredients[edit | edit source]
- 200g Halloumi cheese
- 2 cups of fresh Spinach
- 1 Onion, finely chopped
- 2 cloves of Garlic, minced
- 1 tbsp Ginger, grated
- 1 Red chili, finely chopped
- 2 tbsp Curry powder
- 1 can of Coconut milk
- 2 tbsp Coconut oil
- Salt and Pepper to taste
Instructions[edit | edit source]
- Heat the coconut oil in a large pan over medium heat.
- Add the onion, garlic, ginger, and chili to the pan and sauté until the onion is translucent.
- Add the curry powder to the pan and stir well to combine.
- Cut the halloumi into cubes and add to the pan. Cook until the halloumi is golden brown on all sides.
- Add the coconut milk to the pan and stir well to combine. Bring the mixture to a simmer.
- Add the spinach to the pan and stir well to combine. Cook until the spinach has wilted.
- Season the curry with salt and pepper to taste.
- Serve the curry hot with a side of cauliflower rice if desired.
