Low Carb Hearty Chicken and Vegetable Stew[edit | edit source]
This is a delicious and hearty keto friendly recipe for a chicken and vegetable stew. It's packed with nutritious ingredients and is perfect for a comforting meal.
Ingredients[edit | edit source]
- 2 lbs of chicken breasts, cut into chunks
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 1 cup of mushrooms, sliced
- 4 cups of chicken broth
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat.
- Add the chicken and cook until browned on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, celery, bell pepper, and mushrooms. Cook until the vegetables are softened.
- Return the chicken to the pot and add the chicken broth, salt, pepper, thyme, and rosemary.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through and the flavors are well combined.
