Low Carb Lettuce Enchiladas[edit | edit source]

Low Carb Lettuce Enchiladas is a delicious and healthy keto friendly recipe. It is a perfect meal for those who are on a ketogenic diet and are looking for a tasty and satisfying dish.

Ingredients[edit | edit source]

Instructions[edit | edit source]

  1. Start by washing the Iceberg lettuce and carefully removing the leaves to use as the enchilada wraps.
  2. In a large pan, cook the Ground beef until it is browned and fully cooked.
  3. Add the chopped Onion and Bell pepper to the pan and cook until they are soft.
  4. Pour the Enchilada sauce into the pan and stir until the beef and vegetables are well coated.
  5. Season with Salt and Pepper to taste.
  6. Lay out a lettuce leaf and spoon some of the beef mixture onto it.
  7. Sprinkle some shredded Cheddar cheese on top of the beef.
  8. Roll the lettuce leaf up like an enchilada and repeat with the remaining lettuce leaves and beef mixture.
  9. Serve the enchiladas with a dollop of Sour cream on top.
