Low Carb Monster Pancakes are a delicious and healthy breakfast option for those following a keto diet. They are easy to prepare and packed with protein and healthy fats, making them a perfect way to start your day.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 4 eggs
- 1/2 cup of unsweetened almond milk
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 2 tablespoons of erythritol or other keto-friendly sweetener
- 1 teaspoon of vanilla extract
- Butter or coconut oil for frying
Instructions[edit | edit source]
- In a large bowl, combine the almond flour, baking powder, salt, and erythritol.
- In another bowl, whisk together the eggs, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until a batter forms.
- Heat a large skillet over medium heat and add a small amount of butter or coconut oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with your favorite keto-friendly toppings.
