Low Carb Pumpkin Pancakes[edit | edit source]
Low carb pumpkin pancakes are a delicious and healthy breakfast option for those following a keto diet. They are easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 1/2 cup Pumpkin puree
- 2 Eggs
- 1/2 cup Almond flour
- 1/4 cup Coconut flour
- 1/4 cup Erythritol or other keto-friendly sweetener
- 1/2 tsp Baking powder
- 1/2 tsp Pumpkin spice
- 1/4 tsp Salt
- Butter or Coconut oil for frying
Instructions[edit | edit source]
- In a large bowl, combine the pumpkin puree and eggs. Mix until well combined.
- In a separate bowl, combine the almond flour, coconut flour, erythritol, baking powder, pumpkin spice, and salt. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Heat a large skillet over medium heat and add a small amount of butter or coconut oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with your favorite keto-friendly toppings.
