Low carb pumpkin pancakes are a delicious and healthy breakfast option for those following a keto diet. They are easy to prepare and packed with flavor.

  1. In a large bowl, combine the pumpkin puree and eggs. Mix until well combined.
  2. In a separate bowl, combine the almond flour, coconut flour, erythritol, baking powder, pumpkin spice, and salt. Mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Heat a large skillet over medium heat and add a small amount of butter or coconut oil.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with your favorite keto-friendly toppings.
