Low Carb Raspberry Cheesecake Swirl Brownies[edit | edit source]

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine the almond flour, cocoa powder, erythritol, and baking powder. Mix well.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients. Mix until a thick batter forms.
  4. Pour the brownie batter into the prepared baking pan and spread it out evenly.
  5. In another bowl, beat the cream cheese until it's smooth. Add the erythritol, egg, and vanilla extract. Mix until well combined.
  6. Drop spoonfuls of the cream cheese mixture on top of the brownie batter. Add dollops of raspberry jam in between the cream cheese.
  7. Use a knife to swirl the cream cheese and raspberry jam into the brownie batter, creating a marbled effect.
  8. Bake for 25-30 minutes, or until the edges are set but the center is still slightly jiggly.
  9. Allow the brownies to cool completely in the pan before cutting into squares.
