A delicious and healthy dessert option for those following a keto diet, these Low Carb Spice Cakes are sure to satisfy your sweet tooth without breaking your diet.
Ingredients[edit | edit source]
- 1 cup of almond flour
- 1/2 cup of coconut flour
- 1/2 cup of erythritol
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 tablespoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/4 teaspoon of cloves
- 1/2 cup of butter, melted
- 4 large eggs
- 1/2 cup of almond milk
- 1 teaspoon of vanilla extract
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a cake comes out clean.
- Allow the cakes to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
