This is a delicious and healthy keto friendly recipe for a Low Carb Strawberry Cake with Vanilla Buttercream. It's perfect for those who are on a ketogenic diet and want to enjoy a sweet treat without the guilt.

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch cake pan.
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the eggs, almond milk, coconut oil, and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in the chopped strawberries.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is cooling, prepare the vanilla buttercream. Beat the butter until creamy, then gradually add the powdered erythritol and vanilla extract, beating until light and fluffy.
  7. Once the cake is completely cooled, frost with the vanilla buttercream.
