  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan, add the bell pepper and onion. Cook until they are softened.
  6. Add the garlic and cook for another minute.
  7. In a bowl, combine the apple cider vinegar, soy sauce, erythritol, and xanthan gum. Stir until the erythritol is dissolved.
  8. Pour the sauce over the vegetables in the pan.
  9. Add the chicken back into the pan and stir to coat with the sauce.
  10. Cook for another 5-10 minutes, until the chicken is cooked through and the sauce has thickened.
