A delicious and healthy keto friendly recipe, the Low Carb Sweet Sour Chicken is a perfect dish for those who are on a ketogenic diet. This recipe is easy to prepare and packed with flavors that will surely satisfy your taste buds.
Ingredients[edit | edit source]
- 500g chicken breast, cut into bite-sized pieces
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- 2 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce
- 2 tablespoons erythritol
- 1 teaspoon xanthan gum
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions[edit | edit source]
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a pan over medium heat.
- Add the chicken pieces and cook until they are browned on all sides.
- Remove the chicken from the pan and set aside.
- In the same pan, add the bell pepper and onion. Cook until they are softened.
- Add the garlic and cook for another minute.
- In a bowl, combine the apple cider vinegar, soy sauce, erythritol, and xanthan gum. Stir until the erythritol is dissolved.
- Pour the sauce over the vegetables in the pan.
- Add the chicken back into the pan and stir to coat with the sauce.
- Cook for another 5-10 minutes, until the chicken is cooked through and the sauce has thickened.
