  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, mix together the melted butter and erythritol until well combined.
  4. Beat in the eggs, one at a time, then stir in the almond milk and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  6. Fold in the grated zucchini.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
