A delicious and healthy keto friendly recipe, Low Carb Zucchini Bread is a perfect choice for those who are on a ketogenic diet. This bread is not only low in carbs but also high in fiber and protein.
Ingredients[edit]
- 1 1/2 cups of Almond Flour
- 1/2 cup of Coconut Flour
- 2 teaspoons of Baking Powder
- 1/2 teaspoon of Salt
- 1/2 cup of Butter, melted
- 1 cup of Erythritol
- 4 large Eggs
- 1/2 cup of Almond Milk
- 1 teaspoon of Vanilla Extract
- 1 1/2 cups of grated Zucchini
Instructions[edit]
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the almond flour, coconut flour, baking powder, and salt.
- In another bowl, mix together the melted butter and erythritol until well combined.
- Beat in the eggs, one at a time, then stir in the almond milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
- Fold in the grated zucchini.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
