A delicious and healthy keto friendly recipe, the Low Carb Zucchini Ciabatta is a perfect choice for those who are on a ketogenic diet. This recipe is easy to prepare and packed with nutrients.
Ingredients[edit | edit source]
- 1 large zucchini, grated
- 1 cup of almond flour
- 1/2 cup of coconut flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 4 large eggs
- 1/4 cup of olive oil
- 1/2 cup of water
Instructions[edit | edit source]
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the grated zucchini, almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk together the eggs, olive oil, and water.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
