Maple Asparagus Salad[edit | edit source]
A delicious and nutritious keto friendly salad that is perfect for any meal. This recipe is easy to prepare and packed with flavors that will satisfy your taste buds.
Ingredients[edit | edit source]
- 1 bunch of fresh asparagus
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 2 tablespoons of maple syrup
- 1 tablespoon of apple cider vinegar
- 1/2 cup of chopped pecans
- 1/4 cup of crumbled feta cheese
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Trim the ends of the asparagus and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Roast the asparagus in the preheated oven for about 15 minutes, or until tender.
- While the asparagus is roasting, prepare the dressing. In a small bowl, combine the maple syrup and apple cider vinegar. Stir until well combined.
- Remove the asparagus from the oven and let it cool for a few minutes.
- Place the roasted asparagus in a salad bowl. Drizzle with the maple dressing and toss to coat.
- Top the salad with chopped pecans and crumbled feta cheese.
- Serve immediately and enjoy!
