A delicious and nutritious keto friendly recipe, Mini Pizza Egg Bakes are perfect for breakfast, lunch, or dinner. They are easy to make and packed with protein and healthy fats.
Ingredients[edit | edit source]
- 6 large Eggs
- 1/2 cup of Mozzarella Cheese
- 1/4 cup of Parmesan Cheese
- 1/2 cup of Pepperoni
- 1/2 cup of Bell Peppers
- 1/2 cup of Onions
- 1/2 cup of Tomato Sauce
- 1 teaspoon of Oregano
- Salt and Pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In a large bowl, whisk together the eggs, salt, and pepper.
- Add the mozzarella and parmesan cheese to the egg mixture and stir until well combined.
- Chop the pepperoni, bell peppers, and onions into small pieces and add them to the egg and cheese mixture.
- Pour the tomato sauce into the mixture and stir until well combined.
- Grease a muffin tin and pour the mixture into each cup, filling them about 3/4 of the way full.
- Sprinkle the oregano on top of each cup.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops are golden brown.
