Oxtail stifado
Oxtail stifado is a low carbohydrate / keto friendly food item.

Keto Oxtail Stifado is a Greek-inspired stew that uses oxtail as the main meat. This rich and flavorful dish is adapted to fit the ketogenic diet, emphasizing higher fats and low carbs.
Ingredients[edit | edit source]
- 2 lbs oxtail pieces, bone-in
- 2 cups of canned tomatoes, diced
- 1 cup red wine (choose a dry variety)
- 1/2 cup olive oil
- 2 large onions, chopped
- 4 garlic cloves, minced
- 1 tsp ground cinnamon
- 2 bay leaves
- 1 tsp dried oregano
- 1/2 tsp ground cloves
- Salt and pepper to taste
Preparation[edit | edit source]
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the oxtail pieces and brown on all sides.
- Once browned, remove the oxtail and set aside. In the same pot, add the chopped onions and sauté until translucent.
- Add the garlic, cinnamon, oregano, and cloves to the onions and stir well.
- Return the oxtail pieces to the pot and pour in the red wine. Allow the wine to reduce by half.
- Add the diced tomatoes and bay leaves to the pot. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2-3 hours, or until the oxtail is tender and the stew thickens.
- Once cooked, remove the bay leaves and adjust the seasoning if necessary.
Serving Suggestions[edit | edit source]
- Serve the stifado hot with a side of cauliflower rice or Keto bread for a full meal.
- Garnish with fresh parsley or feta cheese crumbles for added flavor.
