A delicious and healthy keto friendly recipe, Pork Chop Baked Celery Root is a perfect meal for those following a low-carb diet.
Ingredients[edit | edit source]
- 4 pork chops
- 1 large celery root, peeled and cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Season the pork chops with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and sear until browned, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.
- In the same skillet, add the celery root, garlic, rosemary, and thyme. Cook for about 5 minutes, until the celery root begins to soften.
- Return the pork chops to the skillet, placing them on top of the celery root. Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, until the pork chops are cooked through and the celery root is tender.
- Serve the pork chops with the baked celery root. Enjoy!
