Pork Chops with Romesco Sauce[edit | edit source]

This is a delicious and healthy recipe for pork chops with romesco sauce. It's perfect for those following a keto diet as it's low in carbs and high in protein and healthy fats.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Season the pork chops with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 5 minutes per side.
  4. Transfer the skillet to the preheated oven and roast until the pork chops are cooked through, about 10 minutes.
  5. While the pork chops are roasting, make the romesco sauce. In a food processor, combine the toasted almonds, minced garlic, roasted red bell pepper, chopped tomatoes, red wine vinegar, extra virgin olive oil, and cayenne pepper. Process until smooth.
  6. Serve the pork chops with the romesco sauce on top.
