Pork Chops with Romesco Sauce[edit | edit source]
This is a delicious and healthy recipe for pork chops with romesco sauce. It's perfect for those following a keto diet as it's low in carbs and high in protein and healthy fats.
Ingredients[edit | edit source]
- 4 bone-in pork chops
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup almonds, toasted
- 2 garlic cloves, minced
- 1 red bell pepper, roasted and peeled
- 2 ripe tomatoes, chopped
- 1 tablespoon red wine vinegar
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon cayenne pepper
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Season the pork chops with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 5 minutes per side.
- Transfer the skillet to the preheated oven and roast until the pork chops are cooked through, about 10 minutes.
- While the pork chops are roasting, make the romesco sauce. In a food processor, combine the toasted almonds, minced garlic, roasted red bell pepper, chopped tomatoes, red wine vinegar, extra virgin olive oil, and cayenne pepper. Process until smooth.
- Serve the pork chops with the romesco sauce on top.
