  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Heat the olive oil in a large skillet over medium heat. Season the pork chops with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the garlic and cook until fragrant, about 1 minute. Add the cauliflower florets and cook until slightly tender, about 5 minutes.
  4. In a large bowl, combine the heavy cream, cheddar cheese, Parmesan cheese, salt, and pepper. Add the cooked cauliflower and stir to coat.
  5. Transfer the cauliflower mixture to a baking dish. Place the pork chops on top of the cauliflower.
  6. Bake in the preheated oven until the cauliflower is tender and the cheese is bubbly and golden brown, about 30 minutes. Let rest for 5 minutes before serving.
