Pork tenderloin curry sauce is a delicious, keto-friendly dish that is easy to prepare and packed with flavor. This recipe serves 4 people.

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the pork tenderloin with salt and pepper.
  3. Heat the coconut oil in a large oven-safe skillet over medium heat.
  4. Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.
  5. Remove the pork from the skillet and set aside.
  6. In the same skillet, add the onion, garlic, and ginger. Cook until the onion is translucent, about 5 minutes.
  7. Add the curry powder and cook for another minute.
  8. Stir in the coconut milk and bring the mixture to a simmer.
  9. Return the pork to the skillet, spooning some of the sauce over the top.
  10. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork is cooked to your desired level of doneness.
  11. Let the pork rest for a few minutes before slicing. Serve the pork with the curry sauce and garnish with fresh cilantro.
