Pork tenderloin curry sauce
Pork tenderloin curry sauce is a delicious, keto-friendly dish that is easy to prepare and packed with flavor. This recipe serves 4 people.
Ingredients[edit]
- 1 Pork tenderloin (about 1 pound)
- 2 tablespoons Coconut oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon fresh Ginger, grated
- 2 tablespoons Curry powder
- 1 can (13.5 ounces) Coconut milk
- Salt and Pepper to taste
- Fresh Cilantro for garnish
Instructions[edit]
- Preheat your oven to 400 degrees F (200 degrees C).
- Season the pork tenderloin with salt and pepper.
- Heat the coconut oil in a large oven-safe skillet over medium heat.
- Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the onion, garlic, and ginger. Cook until the onion is translucent, about 5 minutes.
- Add the curry powder and cook for another minute.
- Stir in the coconut milk and bring the mixture to a simmer.
- Return the pork to the skillet, spooning some of the sauce over the top.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the pork is cooked to your desired level of doneness.
- Let the pork rest for a few minutes before slicing. Serve the pork with the curry sauce and garnish with fresh cilantro.
