Red Coleslaw is a vibrant and crunchy side dish made primarily from shredded red cabbage. It pairs perfectly with grilled meats and adds a burst of color and texture to any meal.
Ingredients[edit | edit source]
- 4 cups red cabbage, shredded
- 1/2 medium red onion, thinly sliced
- 1 medium carrot, grated
- 1/2 cup mayonnaise (preferably sugar-free)
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp sweetener (e.g., erythritol or stevia), optional
- Salt and pepper, to taste

- 1. In a large mixing bowl, combine the shredded red cabbage, red onion, and grated carrot.
- 2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and sweetener (if using).
- 3. Pour the dressing over the cabbage mixture and toss until everything is well coated.
- 4. Season with salt and pepper to taste.
- 5. Chill in the refrigerator for at least one hour before serving to allow flavors to meld.
