This is a delicious and nutritious keto friendly recipe for Roasted Pumpkin with Nuts and Manchego Cheese. It's a perfect dish for those who are on a ketogenic diet and are looking for a tasty and satisfying meal.
Ingredients[edit | edit source]
- 1 medium pumpkin
- 1 cup of mixed nuts (almonds, walnuts, pecans)
- 1 cup of grated manchego cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 200°C (392°F).
- Cut the pumpkin into small cubes and place them on a baking tray.
- Drizzle the pumpkin with olive oil and season with salt and pepper.
- Roast the pumpkin in the oven for about 30 minutes, or until it's soft and slightly caramelized.
- While the pumpkin is roasting, toast the mixed nuts in a dry pan over medium heat until they're golden brown.
- Once the pumpkin is done, remove it from the oven and sprinkle the toasted nuts and grated manchego cheese on top.
- Return the tray to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Serve the roasted pumpkin with nuts and manchego cheese warm.
