A delicious and healthy keto friendly recipe, Roasted Vegetables Tricolore is a perfect side dish or main course for those following a low-carb diet.
Ingredients[edit | edit source]
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large yellow bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces
- 2 zucchini, cut into 1-inch pieces
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon dried Italian herbs
- 1 tablespoon balsamic vinegar
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the bell peppers, onion, zucchini, and garlic.
- Drizzle the vegetables with olive oil, then season with salt, black pepper, and Italian herbs. Toss until the vegetables are evenly coated.
- Spread the vegetables out on a large baking sheet. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
- Drizzle the roasted vegetables with balsamic vinegar before serving.
