Sausage Zucchini Boats[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
  3. Drizzle the zucchinis with olive oil, then season with salt and pepper.
  4. Place the zucchinis cut side down on a baking sheet and bake for 15 minutes.
  5. While the zucchinis are baking, cook the sausage in a skillet over medium heat until browned.
  6. Add the onion and garlic to the skillet and cook until the onion is translucent.
  7. Stir in the tomato sauce and simmer for 5 minutes.
  8. Remove the zucchinis from the oven and flip them over.
  9. Fill the hollow centers of the zucchinis with the sausage mixture.
  10. Top each zucchini boat with Parmesan and mozzarella cheese.
  11. Return the zucchinis to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
