Sausage Zucchini Boats[edit | edit source]
Ingredients[edit | edit source]
- 4 medium zucchini
- 1 lb Italian sausage
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1/2 cup Parmesan cheese, grated
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for drizzling
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
- Drizzle the zucchinis with olive oil, then season with salt and pepper.
- Place the zucchinis cut side down on a baking sheet and bake for 15 minutes.
- While the zucchinis are baking, cook the sausage in a skillet over medium heat until browned.
- Add the onion and garlic to the skillet and cook until the onion is translucent.
- Stir in the tomato sauce and simmer for 5 minutes.
- Remove the zucchinis from the oven and flip them over.
- Fill the hollow centers of the zucchinis with the sausage mixture.
- Top each zucchini boat with Parmesan and mozzarella cheese.
- Return the zucchinis to the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
