This is a delicious and nutritious keto friendly recipe for Scrambled Eggs with Spinach and Smoked Salmon. It's a perfect breakfast or brunch dish that is easy to prepare and packed with protein and healthy fats.
Ingredients[edit | edit source]
- 4 large eggs
- 1 cup of fresh spinach
- 100g of smoked salmon
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions[edit | edit source]
- Crack the eggs into a bowl and whisk until the yolks and whites are fully combined. Season with salt and pepper.
- Heat a non-stick frying pan over medium heat. Add the butter and let it melt.
- Add the spinach to the pan and cook until it wilts, about 2-3 minutes.
- Pour the beaten eggs over the spinach. Let it cook without stirring for a few seconds until it starts to set around the edges.
- Stir the eggs and spinach gently with a spatula, pushing it from the edges towards the center. Cook until the eggs are mostly cooked but still slightly runny in the middle, about 2-3 minutes.
- Remove the pan from the heat and add the smoked salmon, folding it into the eggs.
- Serve immediately.
