Shaved Kohlrabi with Smashed Avocado, Anchovies, and Soft Boiled Eggs[edit | edit source]

This is a delicious and nutritious keto friendly recipe that combines the unique flavors of kohlrabi, avocado, anchovies, and soft boiled eggs.

  1. Start by preparing the kohlrabi. Peel it and then use a mandolin or sharp knife to shave it into thin slices. Set aside.
  2. Next, prepare the avocado. Cut it in half, remove the pit, and scoop out the flesh. Mash it in a bowl until it's smooth.
  3. Chop the anchovies into small pieces and mix them into the mashed avocado.
  4. Now it's time to prepare the eggs. Bring a pot of water to a boil, then carefully lower the eggs into the water. Boil for 6 minutes for a soft yolk, or longer if you prefer a harder yolk. Once they're done, peel them and cut them in half.
  5. To assemble the dish, lay out the shaved kohlrabi on a plate. Spread the avocado mixture on top, then place the halved eggs on top. Drizzle with olive oil and season with salt and pepper.
