Shaved Kohlrabi with Smashed Avocado, Anchovies, and Soft Boiled Eggs[edit | edit source]
This is a delicious and nutritious keto friendly recipe that combines the unique flavors of kohlrabi, avocado, anchovies, and soft boiled eggs.
Ingredients[edit | edit source]
- 2 medium kohlrabi
- 2 ripe avocado
- 4 anchovies
- 4 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by preparing the kohlrabi. Peel it and then use a mandolin or sharp knife to shave it into thin slices. Set aside.
- Next, prepare the avocado. Cut it in half, remove the pit, and scoop out the flesh. Mash it in a bowl until it's smooth.
- Chop the anchovies into small pieces and mix them into the mashed avocado.
- Now it's time to prepare the eggs. Bring a pot of water to a boil, then carefully lower the eggs into the water. Boil for 6 minutes for a soft yolk, or longer if you prefer a harder yolk. Once they're done, peel them and cut them in half.
- To assemble the dish, lay out the shaved kohlrabi on a plate. Spread the avocado mixture on top, then place the halved eggs on top. Drizzle with olive oil and season with salt and pepper.
