Slow Cooker Keto Chicken Tikka Masala is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavors from the spices used.
Ingredients[edit | edit source]
- 2 lbs chicken breast, cut into bite-sized pieces
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 can (14 oz) tomato puree
- 1 cup coconut milk
- 2 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp coconut oil
- Fresh cilantro for garnish
Instructions[edit | edit source]
- Heat the coconut oil in a pan over medium heat. Add the onion, garlic, and ginger and sauté until the onions are translucent.
- Add the chicken pieces to the pan and cook until they are browned on all sides.
- Transfer the chicken and onion mixture to the slow cooker.
- In the same pan, add the tomato puree, coconut milk, garam masala, turmeric, cumin, coriander, cayenne pepper, salt, and pepper. Stir well to combine.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Garnish with fresh cilantro before serving.
