A warm and comforting keto friendly recipe, the Spiced Pumpkin Soup is a perfect dish for a chilly evening. This recipe is not only delicious but also packed with nutrients.

  1. Preheat the oven to 200°C (400°F). Cut the pumpkin into halves, remove the seeds and brush with 1 tablespoon of olive oil. Roast in the oven for about 45 minutes or until tender.
  2. In a large pot, heat the remaining olive oil over medium heat. Add the onion and garlic and sauté until soft and fragrant.
  3. Scoop out the pumpkin flesh and add it to the pot. Add the cumin, nutmeg, and cinnamon and stir well to combine.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.
  5. Use a blender to puree the soup until smooth. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
