Spiced Pumpkin Soup[edit | edit source]
A warm and comforting keto friendly recipe, the Spiced Pumpkin Soup is a perfect dish for a chilly evening. This recipe is not only delicious but also packed with nutrients.
Ingredients[edit | edit source]
- 1 medium pumpkin
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Preheat the oven to 200°C (400°F). Cut the pumpkin into halves, remove the seeds and brush with 1 tablespoon of olive oil. Roast in the oven for about 45 minutes or until tender.
- In a large pot, heat the remaining olive oil over medium heat. Add the onion and garlic and sauté until soft and fragrant.
- Scoop out the pumpkin flesh and add it to the pot. Add the cumin, nutmeg, and cinnamon and stir well to combine.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.
- Use a blender to puree the soup until smooth. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
