Spinach and Feta Stuffed Chicken
Keto Spinach and Feta Stuffed Chicken combines the savory flavors of spinach and feta cheese, wrapped in juicy chicken breasts. This low-carb dish is not only scrumptious but also provides an excellent source of protein and essential nutrients.
Ingredients[edit | edit source]
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tsp garlic, minced
- Salt and pepper, to taste
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
Instructions[edit | edit source]
- Preheat oven to 375°F (190°C).
- In a skillet, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chopped spinach to the skillet and cook until wilted.
- Remove from heat and stir in the feta cheese.
- Cut a pocket into each chicken breast, taking care not to slice all the way through.
- Stuff each chicken pocket with the spinach and feta mixture. Secure with toothpicks if necessary.
- Season the outside of the chicken breasts with salt, pepper, dried oregano, and red pepper flakes.
- Heat the remaining olive oil in a skillet over medium-high heat. Add the chicken breasts and sear on both sides until golden brown.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
