Stuffed poblano peppers is a delicious and nutritious keto friendly recipe. This dish is packed with flavors and is perfect for those who are on a ketogenic diet.
Ingredients[edit | edit source]
- 4 large Poblano peppers
- 1 lb Ground beef
- 1 cup Cheddar cheese, shredded
- 1/2 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Chili powder
- Salt and pepper to taste
- 1/2 cup Sour cream (optional)
- Fresh Cilantro for garnish (optional)
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Cut the poblano peppers in half lengthwise and remove the seeds and membranes.
- In a large skillet, cook the ground beef and onion over medium heat until the beef is no longer pink and the onion is tender.
- Add the garlic, cumin, chili powder, salt, and pepper to the skillet and cook for another minute.
- Remove the skillet from the heat and stir in the shredded cheddar cheese.
- Stuff each poblano pepper half with the beef and cheese mixture.
- Place the stuffed peppers on a baking sheet and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve the stuffed poblano peppers with sour cream and garnish with fresh cilantro, if desired.
