Thai BBQ Pork Salad (Keto Friendly)[edit | edit source]

Ingredients[edit | edit source]

Instructions[edit | edit source]

  1. Marinate the pork loin in a mixture of fish sauce, soy sauce, erythritol, lime juice, garlic, and chili pepper for at least 2 hours, or overnight for best results.
  2. Preheat your BBQ to medium-high heat. Grill the pork loin for about 7-10 minutes on each side, or until the internal temperature reaches 145°F (63°C). Let it rest for a few minutes before slicing.
  3. In a large bowl, combine the lettuce, cilantro, mint, basil, and green onions. Add the sliced pork and toss everything together.
  4. Drizzle the remaining marinade over the salad as a dressing, and toss again to combine. Serve immediately.
