This is a delicious and easy-to-make keto friendly recipe for Thai Peanut Shrimp Curry. It's packed with flavors and will surely satisfy your taste buds.

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the garlic and onion to the pan and sauté until the onion becomes translucent.
  3. Add the red and green bell peppers to the pan and continue to sauté until they are tender.
  4. Add the shrimp to the pan and cook until they turn pink.
  5. In a separate bowl, mix together the coconut milk, peanut butter, red curry paste, fish sauce, and erythritol.
  6. Pour the sauce over the shrimp and vegetables in the pan and stir to combine.
  7. Allow the curry to simmer for about 10 minutes, or until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Garnish with cilantro before serving.
