Thai Peanut Shrimp Curry[edit | edit source]
This is a delicious and easy-to-make keto friendly recipe for Thai Peanut Shrimp Curry. It's packed with flavors and will surely satisfy your taste buds.
Ingredients[edit | edit source]
- 1 lb of shrimp, peeled and deveined
- 1 can of coconut milk
- 2 tablespoons of peanut butter
- 2 tablespoons of red curry paste
- 1 tablespoon of fish sauce
- 1 tablespoon of erythritol (or any keto-friendly sweetener)
- 1/2 cup of red bell pepper, sliced
- 1/2 cup of green bell pepper, sliced
- 1/2 cup of onion, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of coconut oil
- Salt and pepper to taste
- Cilantro for garnish
Instructions[edit | edit source]
- Heat the coconut oil in a large pan over medium heat.
- Add the garlic and onion to the pan and sauté until the onion becomes translucent.
- Add the red and green bell peppers to the pan and continue to sauté until they are tender.
- Add the shrimp to the pan and cook until they turn pink.
- In a separate bowl, mix together the coconut milk, peanut butter, red curry paste, fish sauce, and erythritol.
- Pour the sauce over the shrimp and vegetables in the pan and stir to combine.
- Allow the curry to simmer for about 10 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste.
- Garnish with cilantro before serving.
