A delightful, tangy dessert that is both keto-friendly and delicious. The Toasted Coconut Lemon Squares are a perfect treat for those on a keto diet.

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, 1/4 cup of erythritol, and salt. Stir in the melted butter until a dough forms.
  3. Press the dough into the bottom of the prepared baking dish. Bake for 10 minutes, or until lightly golden. Remove from the oven and set aside.
  4. In another bowl, whisk together the eggs, lemon juice, lemon zest, and the remaining 1/4 cup of erythritol. Stir in the baking powder.
  5. Pour the lemon mixture over the baked crust. Sprinkle the top with coconut flakes.
  6. Return the dish to the oven and bake for 20-25 minutes, or until the coconut is toasted and the filling is set.
  7. Allow the squares to cool completely before cutting into squares.
