Toasted Coconut Lemon Squares[edit | edit source]
A delightful, tangy dessert that is both keto-friendly and delicious. The Toasted Coconut Lemon Squares are a perfect treat for those on a keto diet.
Ingredients[edit | edit source]
- 1 cup of almond flour
- 1/2 cup of coconut flour
- 1/2 cup of erythritol
- 1/2 cup of unsweetened coconut flakes
- 1/2 cup of butter, melted
- 4 large eggs
- 1/2 cup of fresh lemon juice
- 1 tablespoon of lemon zest
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, 1/4 cup of erythritol, and salt. Stir in the melted butter until a dough forms.
- Press the dough into the bottom of the prepared baking dish. Bake for 10 minutes, or until lightly golden. Remove from the oven and set aside.
- In another bowl, whisk together the eggs, lemon juice, lemon zest, and the remaining 1/4 cup of erythritol. Stir in the baking powder.
- Pour the lemon mixture over the baked crust. Sprinkle the top with coconut flakes.
- Return the dish to the oven and bake for 20-25 minutes, or until the coconut is toasted and the filling is set.
- Allow the squares to cool completely before cutting into squares.
