Tomato, Basil, and Mozzarella Galette[edit | edit source]
A delicious and keto-friendly recipe, the Tomato, Basil, and Mozzarella Galette is a perfect dish for those following a keto diet.
Ingredients[edit | edit source]
- 1 cup Almond flour
- 1/2 cup Coconut flour
- 1/2 cup Grated Parmesan cheese
- 1/2 cup Cold butter
- 1/2 cup Ice water
- 1/2 teaspoon Salt
- 2 large Tomatoes
- 1 cup Mozzarella cheese
- 1/2 cup Fresh basil leaves
- Olive oil for drizzling
- Salt and Pepper to taste
Instructions[edit | edit source]
- In a food processor, combine the almond flour, coconut flour, grated Parmesan, cold butter, and salt. Pulse until the mixture resembles coarse crumbs.
- Slowly add the ice water and pulse until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C).
- Slice the tomatoes and mozzarella, and chop the basil.
- Roll out the dough between two pieces of parchment paper into a circle.
- Arrange the tomatoes, mozzarella, and basil in the center of the dough, leaving a border around the edge.
- Fold the edges of the dough over the filling.
- Drizzle the galette with olive oil and season with salt and pepper.
- Bake for 25-30 minutes, or until the crust is golden and the cheese is bubbly.
- Let the galette cool for a few minutes before slicing and serving.
