The Ultimate Keto Coffee Cake is a delicious, low-carb dessert that is perfect for those following a ketogenic diet. This recipe is easy to make and is sure to satisfy your sweet tooth.
Ingredients[edit | edit source]
- Almond flour - 2 cups
- Erythritol - 1 cup
- Baking powder - 1 tsp
- Cinnamon - 1 tsp
- Salt - 1/2 tsp
- Eggs - 3
- Unsweetened almond milk - 1/2 cup
- Vanilla extract - 1 tsp
- Butter - 1/2 cup, melted
- Cream cheese - 1/2 cup, softened
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a large bowl, combine the almond flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk together the eggs, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour half of the batter into the prepared cake pan.
- In a small bowl, mix together the melted butter and cream cheese. Spread this mixture over the batter in the cake pan.
- Pour the remaining batter over the cream cheese layer.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
