Vietnamese pho
Vietnamese pho is a low carbohydrate / keto friendly food item.

Keto Vietnamese Pho is a modified version of the traditional Vietnamese noodle soup, Pho. The primary difference lies in the substitution of rice noodles with a low-carb alternative like zucchini noodles or shirataki noodles, making it suitable for the ketogenic diet.
Keto Vietnamese Pho Recipe[edit | edit source]
Ingredients[edit | edit source]
- 2 lb beef bones (or chicken bones for chicken pho)
- 3 star anise
- 5 cloves
- 1 cinnamon stick
- 3 cardamom pods
- 1 tbsp coriander seeds
- 1 ginger, halved lengthwise
- 1 onion, halved
- 2 tbsp fish sauce
- 1 tbsp erythritol or another keto sweetener
- 6 cups water
- 1 lb thinly sliced beef (or chicken for chicken pho)
- 2 cups zucchini noodles or shirataki noodles
- Fresh herbs (basil, mint, cilantro)
- Lime wedges, bean sprouts, jalapeños, and green onions for garnish
Preparation[edit | edit source]
- In a large pot, roast the beef bones, star anise, cloves, cinnamon stick, cardamom pods, coriander seeds, ginger, and onion until fragrant and slightly browned.
- Add water to the pot and bring to a boil. Reduce the heat and let it simmer for at least 2 hours.
- Strain the broth to remove the solids.
- Return the broth to the pot and season with fish sauce and erythritol.
- Prepare zucchini noodles using a spiralizer or open the pack of shirataki noodles and rinse them thoroughly.
- Bring the broth to a slight boil, add in the thinly sliced beef (or chicken) and noodles. Let them cook for about 2-3 minutes.
- Serve hot, garnished with fresh herbs, lime wedges, bean sprouts, jalapeños, and green onions.
Serving Suggestions[edit | edit source]
- Customize with additional toppings as per preference.
- Serve with keto salsa or keto hoisin sauce on the side.
