- 2 large zucchinis, spiralized or thinly sliced
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- Salt, to taste
- Pepper, to taste
- A handful of fresh herbs (like basil, mint, or parsley), chopped
- Optional: crumbled feta cheese, chopped walnuts or almonds, cherry tomatoes

- In a large mixing bowl, combine the spiralized or sliced zucchinis.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the zucchini and toss to coat evenly.
- Add in the chopped fresh herbs and any optional ingredients of your choice.
- Serve immediately or refrigerate for later use.
