Almond Flour Keto Pumpkin Bread[edit | edit source]
Ingredients:
- 1.5 cups almond flour
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp xanthan gum
- 3 eggs
- 1/4 cup melted coconut oil
- 1/4 cup pumpkin puree
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 350F. Grease a loaf pan and set it aside.
- In a medium bowl, mix together the almond flour, pumpkin pie spice, baking powder, salt, and xanthan gum.
- In a separate large bowl, beat the eggs, then stir in the melted coconut oil, pumpkin puree, maple syrup, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring until a batter forms.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow the bread to cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely.
