Beef Sirloin with Tarragon Butter and Creamy Gratin[edit | edit source]

  1. Preheat your oven to 180°C (350°F).
  2. Season the beef sirloin steaks with salt and pepper.
  3. Heat a pan over medium heat and add the butter. Once the butter has melted, add the steaks and cook for 3-4 minutes on each side or until done to your liking.
  4. Remove the steaks from the pan and set aside. In the same pan, add the chopped tarragon and cook for 1-2 minutes.
  5. Pour the tarragon butter over the steaks and set aside.
  6. For the creamy gratin, boil the chopped cauliflower until tender. Drain and set aside.
  7. In a saucepan, heat the cream and garlic until simmering. Add the cheese and stir until melted.
  8. Add the cooked cauliflower to the cream and cheese mixture and stir until well combined.
  9. Transfer the cauliflower mixture to a baking dish and bake in the preheated oven for 15-20 minutes or until golden and bubbly.
  10. Serve the beef sirloin steaks with the creamy gratin on the side.
