Cauliflower Mac and Cheese is a delicious, low-carb alternative to traditional macaroni and cheese. It's a perfect dish for those following a keto diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into small florets
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley for garnish (optional)
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Place the cauliflower florets in a large pot of boiling water. Cook until tender, about 5-7 minutes. Drain well.
- In a saucepan over medium heat, combine the heavy cream, cheddar cheese, Parmesan cheese, and garlic powder. Stir until the cheese is melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Add the cooked cauliflower to the cheese sauce, stirring to coat the cauliflower evenly.
- Transfer the mixture to a baking dish. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
- Garnish with chopped parsley, if desired. Serve hot.
