Cauliflower Mac and Cheese is a delicious, low-carb alternative to traditional macaroni and cheese. It's a perfect dish for those following a keto diet.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Place the cauliflower florets in a large pot of boiling water. Cook until tender, about 5-7 minutes. Drain well.
  3. In a saucepan over medium heat, combine the heavy cream, cheddar cheese, Parmesan cheese, and garlic powder. Stir until the cheese is melted and the sauce is smooth.
  4. Season with salt and pepper to taste.
  5. Add the cooked cauliflower to the cheese sauce, stirring to coat the cauliflower evenly.
  6. Transfer the mixture to a baking dish. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  7. Garnish with chopped parsley, if desired. Serve hot.
