- 2 tbsp cumin seeds

- 1 teaspoon of ground black pepper
- 2 tsp amchoor (dried mango powder)
- 1 teaspoon of ground red chili
- 2 tsp ginger powder
- 2 tsp black salt
To begin preparing the chaat masala, dry roast the cumin, coriander, fennel, and peppercorns until the spices release their aroma. After they have cooled to room temperature, grind them in a spice grinder. Amchoor, red chili powder, ginger powder, and black salt should all be added at this point. Combine thoroughly. Place in a container that can seal off air.

The "Papri Chaat" is one of the most well-known varieties of chaat, and in order to prepare it, you will need the following ingredients:
- 1 cup of chickpeas that have been cooked and boiled.
- 1 cup cooked potatoes, diced
- 1 cup of tomatoes, cut very finely
- 1 cup of onions that have been coarsely chopped.
- 1 ounce of cilantro that has been coarsely chopped.
- 2 cups of fried dough wafers that are crunchy (papri)
- tamarind chutney, 2 tablespoons
- 2 tablespoonfuls of mint chutney
- 2 tbsp chaat masala
- 1 standard cup of whipped yogurt
- Salt to taste
In a large mixing basin, combine the chickpeas, potatoes, tomatoes, onions, cilantro, tamarind chutney, mint chutney, chaat masala, and salt. Papri is added, and the mixture is stirred with care. Over top of that, dollop some whipped yogurt and then sprinkle some chaat masala on it. Serve right away, and have fun with it!

Chaat masala can be used in sweet foods as well as savory dishes. One example of a sweet dish that uses chaat masala is fruit chaat, in which fruits such as apple, banana, and mango are blended with chaat masala and a sprinkle of sugar or honey.
