Chicken Fricassee - A Keto Friendly Recipe[edit | edit source]

Chicken Fricassee is a classic French dish that can be easily adapted to fit a keto diet. This recipe is rich in protein and healthy fats, making it a perfect choice for those following a ketogenic lifestyle.

  1. Season the chicken thighs with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion, garlic, and mushrooms. Cook until the vegetables are softened.
  4. Add the white wine to the skillet, scraping the bottom of the pan to loosen any browned bits. Allow the wine to simmer until it has reduced by half.
  5. Add the chicken broth to the skillet and bring to a simmer. Return the chicken thighs to the skillet, nestling them into the broth. Cover the skillet and let it simmer for about 20 minutes, or until the chicken is cooked through.
  6. Stir in the heavy cream and let the sauce simmer for a few more minutes, until it has thickened slightly.
  7. Season the fricassee with additional salt and pepper if needed, and garnish with fresh parsley before serving.
