Chorizo Baked Eggs[edit | edit source]
Chorizo Baked Eggs is a delicious and nutritious keto friendly recipe. It is a perfect breakfast or brunch dish that is high in protein and low in carbs.
Ingredients[edit | edit source]
- 200g of Chorizo
- 4 Eggs
- 1 Onion, finely chopped
- 2 cloves of Garlic, minced
- 1 Red Bell Pepper, chopped
- 1 can of Diced Tomatoes
- 1 tsp of Paprika
- Salt and Pepper to taste
- Fresh Parsley for garnish
Instructions[edit | edit source]
- Preheat the oven to 180°C (350°F).
- In a large ovenproof skillet, cook the chorizo over medium heat until it starts to release its oils.
- Add the onion, garlic, and bell pepper to the skillet and sauté until the vegetables are soft.
- Stir in the diced tomatoes, paprika, salt, and pepper. Let the mixture simmer for about 10 minutes.
- Make four wells in the mixture and crack an egg into each well.
- Transfer the skillet to the preheated oven and bake for about 15 minutes, or until the eggs are cooked to your liking.
- Garnish with fresh parsley before serving.
