Cinnamon Sugar Donut Muffins are a delicious, keto-friendly treat that combines the flavors of a cinnamon sugar donut with the texture of a muffin.

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the almond flour, erythritol, baking powder, xanthan gum, and salt.
  3. In a separate bowl, whisk together the melted butter, unsweetened almond milk, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. While the muffins are cooling, mix together the erythritol and cinnamon for the topping.
  8. Once the muffins are cool enough to handle, dip the tops in the cinnamon sugar mixture.
