Cinnamon Sugar Donut Muffins[edit | edit source]
Cinnamon Sugar Donut Muffins are a delicious, keto-friendly treat that combines the flavors of a cinnamon sugar donut with the texture of a muffin.
Ingredients[edit | edit source]
- 1 1/2 cups of Almond Flour
- 1/2 cup of Erythritol
- 2 tsp of Baking Powder
- 1/2 tsp of Xanthan Gum
- 1/2 tsp of Salt
- 1/2 cup of Unsalted Butter, melted
- 1/2 cup of Unsweetened Almond Milk
- 3 large Eggs
- 1 tsp of Vanilla Extract
For the Cinnamon Sugar Topping:
- 1/4 cup of Erythritol
- 1 tsp of Cinnamon
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the almond flour, erythritol, baking powder, xanthan gum, and salt.
- In a separate bowl, whisk together the melted butter, unsweetened almond milk, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- While the muffins are cooling, mix together the erythritol and cinnamon for the topping.
- Once the muffins are cool enough to handle, dip the tops in the cinnamon sugar mixture.
