Creamy Low Carb Chicken, Kale and Cauliflower Soup[edit | edit source]
This is a delicious and nutritious keto friendly recipe for Creamy Low Carb Chicken, Kale and Cauliflower Soup. It's perfect for those on a low carb diet or anyone looking for a healthy and satisfying meal.
Ingredients[edit | edit source]
- 2 tablespoons of olive oil
- 1 pound of chicken breast, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 head of cauliflower, chopped
- 4 cups of kale, chopped
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned. Remove the chicken from the pot and set aside.
- In the same pot, add the onion and garlic. Cook until the onion is translucent.
- Add the cauliflower to the pot and cook for about 5 minutes, until it begins to soften.
- Add the kale and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
- Return the chicken to the pot and add the heavy cream. Stir well to combine all the ingredients. Season with salt and pepper to taste.
- Let the soup simmer for another 10 minutes, until it's heated through. Serve hot.
