This is a delicious and nutritious keto friendly recipe for Creamy Low Carb Chicken, Kale and Cauliflower Soup. It's perfect for those on a low carb diet or anyone looking for a healthy and satisfying meal.

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onion and garlic. Cook until the onion is translucent.
  3. Add the cauliflower to the pot and cook for about 5 minutes, until it begins to soften.
  4. Add the kale and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
  5. Return the chicken to the pot and add the heavy cream. Stir well to combine all the ingredients. Season with salt and pepper to taste.
  6. Let the soup simmer for another 10 minutes, until it's heated through. Serve hot.
