Crispy Tofu and Bok Choy Salad[edit | edit source]
Crispy Tofu and Bok Choy Salad is a delicious and healthy keto friendly recipe. It is packed with protein from the tofu and full of antioxidants from the bok choy. This recipe is perfect for those on a keto diet as it is low in carbs and high in fats.
Ingredients[edit | edit source]
- 1 block of firm tofu
- 2 heads of bok choy
- 2 tablespoons of sesame oil
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of chili flakes
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the tofu into cubes and place them on a baking sheet.
- Drizzle the tofu with 1 tablespoon of sesame oil and season with salt and pepper.
- Bake the tofu in the preheated oven for 20-25 minutes, until crispy.
- While the tofu is baking, chop the bok choy and place it in a large bowl.
- In a small bowl, mix together the remaining sesame oil, soy sauce, rice vinegar, and chili flakes.
- Once the tofu is done, add it to the bowl with the bok choy.
- Drizzle the dressing over the salad and toss to combine.
- Serve the salad immediately, or refrigerate it for later.
