Eggs Benedict Casserole[edit | edit source]
Eggs Benedict Casserole is a delicious and nutritious keto friendly recipe. It is a perfect dish for breakfast or brunch and can be prepared in advance.
Ingredients[edit | edit source]
- 12 eggs
- 1 cup of milk
- 3 cups of diced ham
- 6 English muffins, cubed
- 1/4 cup of chopped chives
- 1 teaspoon of paprika
- Salt and pepper to taste
- 1 recipe Hollandaise sauce
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large bowl, whisk together the eggs and milk until well combined.
- Add the diced ham, cubed English muffins, chopped chives, paprika, salt, and pepper to the egg mixture. Stir until all ingredients are well coated.
- Pour the mixture into a greased 9x13 inch baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown.
- While the casserole is baking, prepare the Hollandaise sauce according to the recipe instructions.
- Once the casserole is done, remove it from the oven and let it cool for a few minutes.
- Drizzle the Hollandaise sauce over the top of the casserole before serving.
