Gingerbread Pumpkin Cheesecake Bars[edit | edit source]

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, combine the crust ingredients. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, erythritol, vanilla extract, pumpkin spice, and egg. Beat until well combined. Pour the mixture over the crust.
  4. In a medium saucepan, melt the butter. Remove from heat and stir in the erythritol and molasses. Once cooled slightly, whisk in the egg.
  5. In a separate bowl, combine the almond flour, ginger, cinnamon, cloves, nutmeg, and baking soda. Stir the dry ingredients into the wet ingredients until well combined. Spread the mixture over the cheesecake layer.
  6. Bake for 30-35 minutes, or until the top is set and lightly browned. Let cool completely before cutting into bars.
